Last month we published the Blue Vegan Chia Pudding recipe throughout our various channels and after its success, this month we are coming with a Rainbow Chia Pudding that, it is not only visually appealing, but also a powerhouse of nutrients.
In the previous blog post we talked about the health benefit of chia seeds. If you want to be fully vegan or, you would like to significantly reduce your meat consumption, chia seeds are a great alternative to obtain nutrients that will support your body. Why Rainbow Food?
Rainbow-colored food often elicits a strong visual appeal and it can be considered attractive for several reasons. For instance, the vibrant and contrasting colors of rainbow food create a visually appealing display. Furthermore, the human eye is naturally drawn to bright and colorful objects, and rainbow food stands out among more monotonous or single-colored foods. Additionally, colorful meals resemble novelty and fun. They offer a playful experience that evoke a sense of excitement and curiosity. However, it's important to note that while rainbow-colored food can be visually appealing, the colors are often achieved through artificial food coloring. For today's recipe, we used the Blue Spirulina, Curcumin Powder and Pitaya Powder.
Ingredients per jar:
4 tbsp chia seeds
100ml plant-based milk (I used almond milk from Alnatura)
Natural food coloring (Blue Spirulina, Curcumin Powder and Pitaya Powder from Raw Nice - Get 15% OFF with code ZOHAR15)
Method 1 (BEST RESULT)
Pour the color powder to the almond milk and mix it well until getting a consistent color. Pour 4 tablespoons chia seeds to the jar, add the coloured almond milk and mix it well. Wait 30mins and then mix it again. Set it aside in the fridge.
Method 2
Pour the almond milk to the jar and add the color powder. Mix it well until getting a consistent color. Then add the 4 tablespoons chia seeds and stir. Once you get an even texture, set it aside in the fridge.
Method 3
Pour the color powder to the almond milk and mix it well until getting a consistent color. Pour 1 tablespoon chia seed to the jar, add the coloured almond milk and right directly add the second tablespoon chia seed to the mix. Stir and add a third tablespoon. Stir again and add the last tablespoon. Mix it well and then set it aside in the fridge.
Overall, you always cover the bowls or jars, and refrigerate them for at least 2-3 hours or overnight, allowing the chia seeds to absorb the liquid and form a pudding-like consistency. As you can see in the YouTube video, following the second and third method, part of the pudding was still too liquid. Following the steps of Method 1, the pudding was sticky and perfect to work with. If we would have wanted to layer one pudding on top of the other, we would have needed to have this sticky consistency.
Once set, remove the chia pudding from the fridge. And then add the ingredients you would like to have for each of them. If you would like to create the rainbow layered effect, layer each color of chia pudding in a clear glass or jar, starting with the red at the bottom and ending with purple on top.
